First-Rate Taco Casserole Recipe

This is now a favorite dish in our home. My kids love it because they can help make it. This recipe was given to me by a co-worker for a different way to use ground beef. It is filling and not hard to make.

10-15 min preparation + 30 min cooking

  • 1 1/2 lbs. browned ground beef
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can kidney beans
  • 1 can black olives
  • 1 C. salsa or 1 pkg. taco seasoning
  • 2 C. shredded cheese
  • 1 bag tortilla chips

Cook and drain ground beef. Preheat oven to 350 degrees. Mix all ingredients above together EXCEPT the tortilla chips, black olives and the cheese. Put a layer of crushed tortilla chips on the bottom of a 9x13-inch casserole pan. Pour mixture over chips and crush more chips to cover. Add the cheese on top. Bake this for 1/2 hour. When done baking, top with the black olives. Let cool for 10-15 minutes and serve.
