As the British may say "fish and chips" are always a good idea. However, the classic English meal is not the healthiest option on the menu. Instead why not make a healthier version of this take-away favorite? This recipe is healthier than your local chopper and just as good too! Simple side dish that occupies this meal is of course french fries!

  • Salmon:
  • 12 oz. salmon fillet
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper for tasting
  • Cucumber Salad:
  • 1 shaved cucumber
  • 8 cherry tomatoes (cut in half)
  • tsp extra virgin oil
  • pinch of salt for tasting

Preheat the oven to 450 degrees F.
Season salmon with salt, pepper, and lemon juice. Place salmon, skin side down, on a non-stick baking sheet. Bake until salmon is cooked through, about 12 to 15 minutes.

Shave cucumber using a mandolin. Place into large bowl. Combine in cherry tomatoes and olive oil to mixture Season with sea and pepper.
