  • ½ onion, chopped
  • 1 carrot, chopped
  • ½ C. potato, peeled and diced
  • ¼ C. celery, chopped
  • 1 T. olive oil
  • 1/3 C. flour
  • Salt and pepper to taste
  • ¼ tsp. rosemary
  • ¼ tsp. oregano
  • 1 C. milk
  • 1 C. chicken broth
  • 2-3 turkey breasts, cooked and cubed
  • 1 sheet pie pastry

In a large saucepan, heat oil and sauté onion, carrot, potato, and celery until tender. Stir in flour, salt, pepper, rosemary, and oregano. Pour in milk and chicken broth; bring to a boil. Cook and stir until the sauce thickens (about 2-3 minutes). Add in turkey and stir well. Pour mixture into four (5-inch) pie plates. Cut circles out of the pie pastry to top each pie, seal edges with a fork, add a slit to the top of each for venting, and wrap up for the freezer. Before cooking, allow pot pies to sit out and thaw on the counter for 30 minutes. Bake at 375 for 30 minutes covered with aluminum foil and an additional 20 minutes uncovered for a golden brown top.
