  • 3 C. cooked chicken, chopped
  • 1 C. Monterey Jack cheese
  • 4 oz. cream cheese, softened
  • ½ red bell pepper, diced
  • 1 jalapeno, seeded and diced
  • 1 T. cumin
  • Salt and pepper to taste
  • 1 (15 oz.) package refrigerated pie crusts

Preheat oven to 400 degrees. In a bowl, combine chicken, cheese, cream cheese, red bell pepper, jalapeno, cumin, salt, and pepper. Roll out pie crusts and cut out rounds with a cookie cutter or glass. Spoon filling into the center of each round, fold dough over, and pinch edges to seal. Bake for 15 minutes until golden.
