  • 1 T. vegetable oil
  • 1 yellow onion, chopped
  • salt and pepper
  • 1 1/2 tsp. curry powder
  • 1 box of mashed potato mix
  • 1 10 oz. bag of frozen peas
  • 1 roll of frozen pie crust

Heat your oven to 375° F. Next, heat the vegetable oil in a large saucepan over medium heat. Throw in the onion and allow it to cook, stirring every once in a while until it's soft and golden brown. Now it's time to add the curry powder, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper. Let it cook and stir for about one minute. Once you have made your box of potatoes and allowed the bag of peas to thaw, you may stir the peas onto the pan.
Use the pie crust to cut out triangles, and place a tablespoon of the potato mix in the center of each piece. Grab the corners of the dough and pinch them to create a triangle shape. Pinch the seams to seal. and place them onto a baking sheet.
Bake the samosas for about 25 minutes until they are golden.
