  • 1 tsp. butter
  • 2 large eggs
  • 1 Tbs. milk
  • 2 strips of bacon
  • 2 Tbs. green onion
  • ½ C. white cheddar or Swiss cheese
  • Salt
  • Pepper

In a medium skillet, fry bacon until cooked to desired liking. Once cooked, remove from skillet and pat dry with paper towel. Set aside.

In a small mixing bowl, beat eggs gently until well beaten. Add milk, salt, pepper and any additional herbs your seasoning you prefer.

Heat a 6-8-inch skillet on high heat. Coat the bottom of the pan with butter. Slowly pour in egg mixture and make sure it covers the bottom of the pan. After about 30 seconds of letting the egg firm up, use a spatula to spread the remaining liquid parts towards the middle. Sprinkle in the cheese and 1 Tbs. of the green onion.

Lay the strips of bacon on one side of the omelette. Once firm, use a spatula to fold one side of the omelette over. Slide the omelette onto a plate and sprinkle remaining green onion on top.
