Flavored Pork With Sweet Cherries

- 2 (1.25-oz. chili seasoning mix)
- 1 1/2 Tbs. chili powder
- 1 lb. pork loin
- 1 1/2 C. chicken stock
- 1 1/2 C. cherry juice, bottled
- 2 Tbs. cornstarch
- 2 Tbs. brown sugar
- 1 tsp. orange zest, grated
- 1 lb. frozen cherries, thawed
Preheat oven to 350 degrees F. Mix together chili seasoning mix and chile powder then rub on both sides of meat. In a 2 qt. baking dish, cover with foil and bake for 35 to 40 minutes.
While meat is cooking, prepare glaze by adding chicken stock, cherry juice, cornstarch, brown sugar, orange zest and half of cherries to a blender. Puree mixture until smooth, then add to a medium saucepan and bring to a simmer over medium heat. Cook and stir occasionally until mixture is thickened.
While sauce is cooking, chop remaining cherries. Remove sauce from heat, stir in chopped cherries and set aside, keeping warm. After pork has cooked for 35 to 40 minutes, remove from oven and drain any fat and or liquid. Spoon half of sauce over meat and return to oven without foil. Continue to cook another 30 minutes or until pork is fork tender. Remove from oven and spoon remaining sauce over meat.
