Flavorful Asparagus

Ingredients
- 1 lb. asparagus
- salt
- 1/4 C. virgin olive oil
- 2 Tbs. red wine vinegar
- black pepper
Directions
Trim off base of asparagus. Bring water to a boil in a large skillet. Add asparagus and salt to taste. Cook until asparagus starts to bend slightly when you lift them from the stem end (4-7 minutes). Remove asparagus. Drain on paper and pat dry. In a large dish, combine oil, vinegar, pinch of salt and 2 pinches pepper. Whisk with a fork until blended. Add asparagus and turn them gently until coated. Serve warm.
