  • 4 ½-5 lb. boneless pork shoulder, twine or netting removed
  • 2 medium yellow onions, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 1 C. chicken stock
  • 1 Tbs. packed dark brown sugar
  • 1 Tbs. chili powder
  • 1 Tbs. salt
  • ½ tsp. ground cumin
  • ¼ tsp. ground cinnamon
  • 2 C. barbecue sauce
  • Bread rolls

Place the chopped onions and garlic in an even layer in the crock pot and pour the chicken stock over it. Combine the sugar, chili powder, salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towel. Rub spice mixture over all of the pork and place the meat on top of the garlic and onions. Cover and cook until the pork is tender, 6-8 hours on high or 8-10 hours on low. Turn off crock pot and remove the pork to a cutting board. Shred the pork. Pour the onion mixture from the crock pot through a strainer and return solids to slow cooker. Return pork to crock pot and pour barbecue sauce over the pork and mix together. Serve on bread rolls and with extra barbecue sauce drizzled on top.
