  • 2 ½ lb. ham hock
  • 3 C. water
  • 8 Tbs. sea salt
  • 2 Tbs. Dijon mustard
  • 2 Tbs. honey
  • 1 red onion, wedged/diced
  • 1 lemon, zested and juiced
  • 2 large sticks of carrots, sliced

Skin the ham hocks. In a large bowl, mix 8 Tbs. of sea salt with the water until it dissolves. Stir in the zest and juice from the lemon. Put the ham in the bowl and cover it with plastic wrap. Let it sit for 2 hours at least. Combine the honey and the mustard and coat the ham with it. Place the ham in a large pan with the onions, carrots, and two cups of water and cover with foil. Preheat the oven to 350 degrees and bake the ham for 2 hours. Take the foil off during the last 20 minutes of baking.
