Ingredients

  • 12 large oxtails
  • 2 C. flour
  • ¼ C. sea salt
  • 4 Tbs. oil
  • 2 Tbs. fresh ground pepper
  • 1 large yellow onion, chopped
  • 2 Tbs. fresh ginger, sliced
  • 8 cloves of garlic, minced
  • 1 can tomatoes drained
  • ½ C. dark soy
  • ½ C. grape jelly
  • 4 Tbs. dry red wine
  • 4 sprigs fresh thyme
  • Salt and pepper to taste

Directions

Combine flour salt and pepper in a large bowl. Coat the tails with the flour mixture. Heat a tablespoon of the oil in a large saucepan and saute the onion and garlic. Add in the rest of the ingredients except the tails. Let the sauce simmer for about 30 minutes. Pour the rest of the oil into a large skillet and brown the meat. Pour the mixture in with the oxtails. Turn the heat to low and let simmer for 3 hours.
