  • 3/4 C. honey (your favorite brand and type)
  • 1/3 C. light vegetable (canola) oil
  • 2 ex. lg. eggs
  • 1/2 C. milk (can use skim)
  • 2 1/2 C. all purpose flour
  • 1 C. quick cooking rolled oats
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cardamom
  • 2 C. craisins (dried cranberries)
  • 1 C. walnut gems

In a large mixing bowl, combine the honey, oil, eggs and milk and mix well. In a separate mixing bowl, combine the flour, oats, soda, baking powder, salt, cinnamon and cardamom, mix well, then stir into the honey mixture. Fold in the craisins and nuts. Spoon this mixture into 2 9 X 5 in. sprayed and floured loaf pans. Place in a preheated 350: oven and bake 40-45 minutes or until kitchen pick inserted comes out clean. Cool in the pans 10-15 minutes, then turn out onto wire racks to cool completely.
