Ingredients

  • 2½ lb. stewing beef, cubed
  • 1 tsp. thyme leaves, chopped
  • 3 T. parsley, chopped
  • ¼ C. flour
  • 1 ½ C. Guinness
  • 2 T. tomato paste
  • 1 T. Worcestershire sauce
  • ¼ C. olive oil
  • 1 ½ C. beef stock
  • 1 C. red onion, diced
  • 2 cloves garlic, sliced
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 carrots, peeled and chopped
  • 2 red potatoes, chopped

Directions

Place the beef into the slow cooker first. Add in the remaining ingredients. Stir up the mixture, so that it marinates the beef. Let it cook for 2 hours on a high setting or until the vegetables soften. Let it cool for 5 minutes. Serve with a dash of salt and pepper. Enjoy!
