Ingredients

  • 6 eggs
  • ½ C. milk
  • ¼ tsp. salt
  • 1/8 tsp. black pepper
  • 1 C. cheddar cheese, shredded
  • ¾ C. zucchini, chopped
  • ¼ C. red bell pepper, chopped
  • 2 Tbs. red onion, chopped

Preheat oven to 350 degrees F. In a medium bowl, beat eggs, milk, salt and pepper until blended. Mix in the cheese, chopped zucchini, chopped red pepper, and chopped onion well. Spoon mixture evenly into 12 greased muffin cups, about ¼ C. for each muffin cup. Bake in the oven for about 20-22 minutes. Remove from oven and let cool for 5 minutes. Remove from muffin tin and serve.
