This is quick, easy and delicious! You can use it in tacos, tostadas, sandwiches, or over rice. It's also good for leftovers. There are a variety of ways to use this recipe. When you walk into your home after a long day, your mouth will water at the fantastic aroma!

Ingredients

  • one 2-3 lb. pork roast, most of fat removed
  • 1 lg. onion, finely diced
  • one 8-oz. can mild red enchilada sauce
  • one 15-oz. can petite diced tomatoes
  • black pepper

Directions

Place pork roast in crockpot. Add onions. Pour tomatoes over the top and then the enchilada sauce. Grind black pepper over the top. Put the lid on the crockpot and cook on low for 10-12 hours. Serve with soft flour tortillas and grated cheddar cheese. You can also serve this yummy pork in numerous other possibilities!
