  • 2 lb. potatoes, peeled, thinly sliced
  • 2 T. unsalted butter
  • 1/2 C. chopped onion
  • 3 T. all-purpose flour
  • 2 C. milk
  • 1 tsp. dry mustard
  • pinch cayenne pepper
  • 1/2 tsp. salt
  • 2 C. shredded Colby-Jack cheese, divided

Preheat your oven to 350°F and lightly grease the inside of a casserole dish. Melt butter in a medium saucepan over medium heat. Add onion and cook for five minutes, stirring occasionally. Whisk in flour and cook for another minute. Stir in milk, mustard, cayenne pepper, and salt. Bring mixture to a boil, stirring occasionally. Reduce heat and let simmer for about three minutes, stirring frequently. Arrange half of the potato slices into your prepared baking dish. Pour half of the milk mixture on top of the potatoes and sprinkle with one cup of cheese. Repeat layering with the remaining ingredients. Bake for one hour, or until sauce is bubbling and potatoes are tender. Let stand for 10 minutes before serving.
