Flavorful Spinach and Tomato Omelette
Serving Size / Yield
- 1 cup Torn Fresh Spinach
- 1 Tbsp Butter
- 5 Eggs
- 4 Tbsp Crumbled Feta Cheese
- 2 Tbsp Cottage Cheese, drained
Cook spinach in a pan, set aside
Melt butter in a flat saute pan.
Beat eggs and add to saute pan at medium heat.
Sprinkle feta and cottage cheese onto half of the egg.
Place spinach and tomatoes on top of cheeses.
Fold egg over the ingredients.
Finish cooking omelette on low heat.
