  • Olive Oil
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 jalapeño pepper, seeded and chopped (optional)
  • 1/2 C. sliced fresh mushrooms
  • 1 Red Pepper (chopped)
  • 1 C. spinach
  • 1 tbsp fresh lime juice
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1 1/2 C. cooked long-grain brown rice
  • 1 1/2 C. black beans, rinsed and drained
  • 1 C. shredded cheese
  • 6 flour tortillas
  • Fresh salsa (optional)
  • Fresh guacamole (optional)

Heat a large skillet over medium-high heat. Drizzle olive oil on pan. When oil begins to sizzle, add onion, garlic, jalapeño, and mushrooms. Sauté ingredients for 5 minutes, stirring occasionally. Gradually add spinach; cook 1 to 2 minutes, stirring until wilted. Stir in lime juice, salt, and cumin.
Next, add rice and beans; cook, stirring constantly, until thoroughly heated. Finally mix in cheese, stirring until melted.
Warm tortillas according to package directions.
Spoon about 2/3 cup mushroom mixture down center of each tortilla; roll up.
Serve with salsa and guacamole, if desired. You can even add hot sauce if you want to spice it up!
