Floating Fruit Parfaits
Ingredients
- 1/2 C. sliced strawberries or cantaloupe balls
- 3/4 C. boiling water
- 1 pkg. strawberry flavor or orange flavor sugar free low calorie gelatin
- 1/2 C. cold water
- 3/4 C. ice cubes
- 1 C. plus 6 Tbs. thawed light whipped topping, divided
Directions
Divide strawberries among 6 dessert glasses. Stir boiling water into dry gelatin mix in medium bowl at least 2 inches until completely dissolved. Add cold water and ice cubes; Stir until ice is completely melted. Remove 3/4 C. of the gelatin; Pour evenly over strawberries.
Refrigerate 20 min. or until gelatin is set but not firm. Add 1 C. of whipped topping to remaining gelatin; Stir with wire whisk until well blended. Spoon evenly over gelatin. Refrigerate 1 hour or until firm. Top each parfait with 1 Tbs. of the remaining whipped topping just before serving. Store leftover parfaits in refrigerator.
