Florida Key Lime Pie

Nothing says Florida Keys like some Key Lime Pie. Get tropical with dessert with this yummy recipe!

Ingredients

  • 8 oz. digestive biscuits or graham crackers, crushed into fine crumbs
  • 4 oz. butter, melted
  • 8 oz. cream cheese
  • 6 oz. sweetened condensed milk
  • grated rind and juice of 2 limes
  • 10 fl. oz. double cream

Directions

Mix together biscuits and melted butter. Press into a lightly greased 9-inch loose bottomed flan tin. Chill until required.

Beat the cream cheese and condensed milk until smooth. Beat in the grated lime rind and 6 Tbs. limejuice. Whip cream into soft peaks, then fold into the cream cheese mixture. Spoon into biscuit base. Chill for 1 hour and serve.

  • Absolutely the best Key lime pie I have ever had. I reduced the double cream to 8 oz. (to reduce some of the sweetness). And I used real key limes. It was worth the work and extra effort. Delicious!!!
