Fluffy and Crispy Brioche French Toast with Powdered Sugar

- 3 Tbs. sugar
- 6 large eggs, beaten
- 1/2 cup heavy cream
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/8 teaspoon allspice
- 4 Tbs. butter, divided
- 12 slices thick brioche bread
Heat oven to 230 degrees. In a stand mixer or bowl using a hand mixer, mix the eggs, cream, 3 Tbs of sugar, and spices. Pour into a 9X13 baking dish. Place brioche slices into the casserole dish and allow to soak for at least 2 minutes.
Heat a large griddle over the highest heat, and place about 2 Tbs. of unsalted butter on the griddle. Cook the French toast for about 2 minutes per side or until golden brown. Transfer to warm oven on a cookie sheet while you finish the batches.
Serve warm with remaining butter and syrup.
