  • 1 T. extra virgin olive oil
  • 1/2 fresh cabbage, cored and sliced thin
  • 1 fresh onion, thinly sliced
  • Salt and black pepper to taste
  • 1 1/3 C. plain yogurt
  • 1/4 C. coconut oil
  • 2 eggs
  • 2 C. flour
  • 4 tsp. baking powder
  • 1 tsp. baking soda

Begin by heating the oil in a skillet over medium heat and place the cabbage and onion in the skillet and cook for about 10 minutes. In a bowl, whisk together the yogurt, milk, coconut oil, and eggs in a bowl until evenly blended. Stir together the flour, baking powder, and baking soda in a large bowl.Pour the first mixture into the the second mixture and combine. Heat a large greased skillet over medium heat and pour 1/4 cupfuls of batter onto the skillet. Flip with a spatula when the batter becomes bubbly. The cakes are ready when each side is golden brown. Serve with a side of melted cheddar cheese.
