  • 1 cup + 1 tablespoon of flour
  • 2 + 3 eggs, beaten
  • 1 + ¾ cup of sugar
  • ½ cup of canola oil
  • ½ cup of buttermilk
  • 1 cup of grated carrot
  • 1 teaspoon of cinnamon
  • 2 packages of cream cheese (16 oz. total), softened
  • ½ cup of sour cream

Preheat oven to 350 degrees Fahrenheit.
In a bowl, mix together flour, 2 beaten eggs, 1 cup of sugar, ½ cup of canola oil, ½ cup of buttermilk, grated carrots and cinnamon; stir well.
Pour into a greased cake pan and bake for 15 minutes.
In another bowl, mix together sour cream, cream cheese, ¾ cup of sugar, 3 beaten eggs and 1 tablespoon of flour; stir until completely smooth. Carefully pour on top of the carrot cake and bake for another 20 minutes together.
Cool, then top with fresh berries and powdered sugar if desired.
Slice and serve!
