Forget It Stew

Super easy to make - you can put it in the oven in the morning and it'll be ready when you come home or at your family dinner time.

  • 2 lb. stew beef
  • 6 potatoes, peeled and cut up
  • 6 carrots, peeled and cut up
  • celery (a stalk or two), cut up
  • sliced onion
  • chopped green pepper, if desired
  • 1/3 C. sugar
  • 1 tsp. salt
  • 4-6 Tbs. tapioca
  • 2-3 C. tomato juice

Layer first 6 ingredients in a casserole dish - do NOT stir or mix. Add the sugar, salt and tapioca. Pour the tomato juice over the top.


Put in 225-degree oven for 6-8 hours. When doubling the recipe, set the oven for 250.
