Forget It Stew
- 2 lb. stew beef
- 6 potatoes, peeled and cut up
- 6 carrots, peeled and cut up
- celery (a stalk or two), cut up
- sliced onion
- chopped green pepper, if desired
- 1/3 C. sugar
- 1 tsp. salt
- 4-6 Tbs. tapioca
- 2-3 C. tomato juice
Layer first 6 ingredients in a casserole dish - do NOT stir or mix. Add the sugar, salt and tapioca. Pour the tomato juice over the top.
DO NOT STIR.
Put in 225-degree oven for 6-8 hours. When doubling the recipe, set the oven for 250.
