By using tender narrow and twisted pasta, this four cheese casarecce pasta will be delightful for dinner. Add shredded chicken and you have a wonderful meal.

  • 1/2 rotisserie chicken, cooked and deboned
  • 1 lb. casarecce
  • 1 1/2 C. mozzarella cheese, shredded
  • 1 1/2 C. pepper jack cheese, shredded
  • 1 1/2 C. white cheddar cheese, shredded
  • 1 C. Parmesan cheese, shredded
  • 2 Tbs. cornstarch
  • 2 Tbs. butter
  • 1/4 C. minced onion
  • 1 clove garlic, minced
  • 3 C. half and half
  • 1/2 C. marinara sauce

Shred chicken and place in bowl. Cook pasta according to directions on package and drain. Mix pasta in bowl with chicken. In a large bowl, mix all four cheeses and cornstarch together. In a saucepan, saute the onions and garlic in butter until onions are clear. Pour the half and half into the onion mixture and turn heat to low. When half and half comes to a simmer, add the cheese. Stir constantly until cheese is melted and smooth. Add to drained pasta and toss to coat very well. Pour in casserole dish. Add marinara sauce on top before serving.
