  • 4 oz. Cream Cheese, softened
  • 1/2 C. Greek Yogurt
  • 1 C. Shredded Cheddar Cheese
  • 1 C. Shredded Mozzarella Cheese
  • 1 C. Shredded Colby-Jack Cheese
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Ground Black Pepper
  • 6 Tbs. Butter, softened
  • 12 slices White Bread

In a medium mixing bowl, use an electric mixer to beat together the Greek yogurt and cream cheese until fluffy. Stir in the cheddar, mozzarella, Colby-Jack, garlic powder, salt, and pepper. Spread a dab of butter across one side of each bread slice. Place 6 bread slices buttered-side-down onto a clean work surface. Spread each slice with about 1/2 cup of the cheese mixture. Press the remaining 6 slices of bread atop the cheese filling, buttered-side-up. Warm a large skillet over medium-high heat. Place the sandwiches in the skillet and grill each side for 2-3 minutes until the bread turns golden-brown and the cheeses are fully melted, working in batches if necessary. Slice each sandwich in half diagonally before serving.
