  • 4 tablespoons butter
  • 4 tablespoons flour
  • 3 cups milk
  • 3/4 teaspoon salt
  • 2 cups grated parmesan cheese
  • 1 pound elbow macaroni
  • 1/2 teaspoon minced garlic
  • 4 ounces grated cheddar cheese
  • 4 ounces grated fontina cheese
  • 4 ounces grated gruyere cheese

Preheat oven to 375°F. Cook pasta 6  minutes. Drain. Stir in milk until smooth. Add butter and flour, stirring constantly. Bring to a boil over medium-high heat. Boil 1 minute. Remove from heat. Stir in 4 ounces cheddar, Fontina, Gruyere, and 2 cups of grated Parmesan cheese until melted. Add cooked pasta. Pour into greased 2-quart casserole. Sprinkle with remaining cheese. Bake uncovered 25 minutes, or until lightly browned.
