Four Cheese Rotini
Ingredients
- 1 lb. rotini
- 1 1/2 C. mozzarella cheese, shredded
- 1 1/2 C. pepper jack cheese, shredded
- 1 1/2 C. white cheddar cheese, shredded
- 1 C. Parmesan cheese, shredded
- 2 Tbs. butter
- 1/4 C. minced onion
- 1 clove garlic, minced
- 3 C. half and half
- 2 Tbs. cornstarch
Directions
Cook pasta according to directions on package and drain. Meanwhile in a bowl, mix all four cheeses and cornstarch together. In a saucepan, saute the onions and garlic in the butter until onions are clear. Pour the half and half into the onion mixture and turn heat to low. When half and half comes to a simmer, add your cheeses. Stir constantly until cheese is melted and smooth. Add to drained pasta and toss to coat very well.
