French Roasted Potatoes

Ingredients
- 24 sm. unpeeled red potatoes, quartered
- 4-5 cloves garlic, minced
- 3 Tbs. margarine, melted and divided
- 3 Tbs. Dijon mustard
- 1/2 C. fresh parsley, chopped
- 1/4 tsp. freshly ground pepper
- salt to taste
Directions
Preheat oven to 375 degrees. Place potatoes, garlic, and 2 tablespoons of margarine in a 9x13 inch pan. Cover with foil and bake for 45-60 minutes, stirring occasionally. Blend mustard, 1 tablespoon margarine, parsley, salt, and pepper. Toss with potatoes to coat. Bake uncovered for 15 minutes.
Serve with: Roast Pork with Rosemary and Garlic
