Ingredients

  • 1 lbs. of store-bought smoked pulled pork
  • 1 onion, sliced
  • 2 cloves of garlic, sliced
  • 2 tablespoons of unsalted butter
  • 2 tablespoon of olive oil
  • 2 tablespoons of tomato puree
  • Salt and pepper to season
  • 1 tablespoon of thyme
  • 1 pinch of sugar
  • 1 cup of beef stock
  • 2 cups of Bread crumbs
  • Mashed potatoes
  • 1 lbs. of russet potatoes, peeled and cubed
  • ½ stick of unsalted butter
  • ¼ cup of heavy whipping cream
  • ¼ cup of milk
  • Salt and pepper to season

Directions

Preheat the oven at 360F.
Using a large sauté pan, melt 2 tablespoons of unsalted butter and mix it 2 tablespoons of olive oil over medium-high heat. Cook the onions and garlic until they are caramelized and softened. Once the onions and garlic are nicely caramelized, add the pulled pork and stir for a good 5 minutes.
Then, season the pulled pork with salt, pepper, and sugar and mix it well with the pulled pork. Add the tomato puree and the beef stock and give a good stir. Lastly, add thyme to the beef. Continue to cook the beef until the liquid is reduced and set it aside.
Mashed potatoes:
In a large mixing bowl, add 4 cups of water and place the cubed potatoes in the bowl. Season the potatoes with salt. Cover the bowl with ceramic wrap and pop it in the microwave for 10 minutes.
Once the potatoes are heated and tender, drain the water. Using the same mixing bowl, mash the potatoes with a masher. Slowly add the half stick of unsalted butter, heavy whipping cream, and milk and continue to mash until it is nicely incorporated. Season the mashed potatoes with salt and pepper.
Using a large baking dish, layer the bottom of the dish with pulled pork. Then, place the mashed potatoes in the middle. Top the dish off with bread crumbs. Place the dish in the oven for about 20-22 minutes or until is golden brown.
