French Sauteed Turkey Sandwich

This sandwich is a much healthier version of the French sandwich, croque monsieur.

Ingredients

  • 4 oz. thinly sliced turkey breast
  • 6 thin slices fresh tomato
  • 4 thin slices 100% whole wheat bread
  • 1/2 tsp. coarse-grain mustard
  • 1/4 C. egg substitute, diluted with 2 tablespoons water
  • cooking spray

Directions

Divide turkey and tomatoes equally between 2 slices of bread. Spread the remaining 2 slices with mustard. Place on top of the filled bread.

Place the combined egg substitute and water in a shallow baking dish large enough to hold both sandwiches. Add sandwiches and carefully turn them over once, until egg mixture is absorbed.

Coat a large heavy-bottomed nonstick skillet with cooking spray. Cook sandwiches over medium-high heat until bottom is browned. Turn carefully and gently press down with a spatula. Continue cooking until second side is browned.
