This fresh vegetable and bacon quiche makes a delicious side dish for brunch. This recipe uses up the leftover vegetables, so you can substitute the broccoli for any number of your favorite vegetables to really make it a summer side dish!

  • 1 blind baked pie crust
  • 4 strips bacon
  • 2 C. broccoli florets, chopped
  • 1 C. colby jack cheese, grated
  • 3/4 C. milk
  • 1/2 C. heavy cream
  • 3 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/16 tsp. nutmeg

Heat the oven to 350 degrees. Cook the bacon in a skillet for about 10 minutes or until crisp. Chop it into pieces and set aside. Put the broccoli florets to the pan and season with salt and pepper. Saute until the broccoli is tender, not mushy, or for about 5-10 minutes. In the pie crust, spread the cooked broccoli and bacon evenly and top with the grated cheese. In a bowl, whisk together the milk, heavy cream, eggs, 1/2 tsp. salt, 1/8 tsp. pepper, and nutmeg. Pour this mix into the pie and bake for 25 to 30 minutes.
