Ingredients
- 2 T. vegetable oil
- 1 onion, diced
- 1 ½ lb. boneless chicken breasts, chopped
- Salt and pepper to taste
- 1 (4 oz.) can diced green chiles, drained
- Flour tortillas
- 3 C. Mexican blend cheese, shredded
- 1 can enchilada sauce

Directions
Preheat oven to 350 degrees. In a skillet, heat oil and sauté onion until softened. Add in green chiles, chicken, salt and pepper. Cook until chicken is no longer pink and remove from heat. Assemble enchiladas with sauce, chicken mixture, and cheese. Roll up, place in a grease baking dish with tortilla seams down, top with remaining sauce and cheese, and bake for 20 to 30 minutes.
