  • ½ C. honey
  • 1 T. cornstarch
  • 2 tsp. lemon juice
  • 1 C. flour
  • 2 T. sugar
  • 1 tsp. baking powder
  • Dash salt
  • ½ C. low-fat milk
  • 3 T. canola oil

Preheat oven to 400 degrees. In a saucepan, toss blueberries with honey. In a small bowl, whisk together cornstarch and lemon juice; pour over blueberries. Bring to a simmer and cook until mixture thickens. Remove from heat and transfer to a baking dish. In a bowl, combine flour, sugar, baking powder, and salt. Stir in milk and oil until well combined. Dollop dough over berries and bake for 30 minutes until golden brown.
