Fresh Apple Cake

Fresh Apple Cake

Make this cake during the fall and have your pick of fresh, ripe apples with deliciously sweet flavoring.

Ingredients

  • Cake:
  • 3 eggs
  • 1 C. vegetable oil
  • 2 C. granulated sugar
  • 3 C. all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla extract
  • 1/2 C. currants
  • 3 C. chopped apples
  • Apple Cake Frosting:
  • 1 C. firmly packed brown sugar
  • 1/2 C. butter or margarine
  • 1/4 C. milk
  • 1 C. chopped nuts
  • 1 C. coconut

Directions

Beat eggs, oil and sugar together. Sift together flour, soda and salt. Stir into liquid mixture. Add vanilla, currants and apples. Dough will be quite thick. Turn into a greased 13x9x2 inch baking pan and bake in a 325 degree preheated oven for 60 minutes. While cake is still hot, use a fork or toothpick to punch holes over the entire cake so that the frosting will run into it.

To make frosting, combine the first 3 ingredients and boil for 3 to 4 minutes. Pour the frosting slowly over the cake. Sprinkle with nuts and coconut. Keep refrigerated.

Variation: Substitute 1 1/2 C. chopped pecans for currants in above recipe. Use the following glaze instead of frosting.

1 C. firmly packed light brown sugar

1/2 C. margarine

1/4 C. evaporated milk

Combine ingredients and boil for 2 1/2 minutes. Spoon over warm cake.
