Ingredients

  • 1/2 C. chopped walnuts
  • 1/4 C. cranberries
  • 1/4 C. balsamic vinegar
  • 1 C. red onion, chopped
  • 1 Tbs. white sugar
  • 1 Tbs. Dijon mustard
  • 1 C. vegetable oil
  • salt and pepper, to taste
  • 10 C. mixed salad greens, rinsed and dried
  • 2 red delicious apples, cored and thinly sliced

Preheat the oven to 350 degrees and spread the walnuts in a single layer on a baking sheet. Bake for 8 to 10 minutes, or until lightly toasted. In a blender or food processor, combine the cranberries, vinegar, onion, sugar, and mustard. Puree until smooth and gradually add oil. Season with salt and pepper. In a salad bowl, toss the greens, apples, and cranberry mixture. Sprinkle with walnuts and serve.
