Ingredients

  • 1 lb. prepared pizza dough
  • 12 large shrimp, peeled, deveined and halved lengthwise
  • 2 cloves garlic, minced fine
  • 1/4 C. oil, divided
  • 1 pinch red pepper flakes
  • 2 large roasted red peppers
  • 1/2 C. black olives
  • 1/4 C. fresh basil leaves
  • 1 large shallot, peeled
  • 1 C. Parmesan cheese, shredded
  • 1 C. Asiago cheese, shredded

Directions

Put a pizza stone in the oven and preheat the oven to 450 degrees. In a bowl, combine the garlic, 2 Tbs. oil, and red pepper flakes. Stir in the shrimp and coat well. Let it stand for 5 minutes.

Meanwhile, put the red peppers, olives, basil, and shallot in a food processor. Pulse until chopped then add the remaining oil until smooth. Roll out the dough onto a pizza peel and sprinkle the dough with cornmeal. Spread the pesto on top and top with shrimp and both cheeses. Bake for 15 minutes, or until the crust is browned and cheeses are melted and browned.
