  • 1 C. packed fresh baby spinach; washed, dried and coarsely chopped
  • 1 can northern beans, drained and rinsed
  • 2 Tbs. extra virgin olive oil
  • 2 cloves garlic, minced
  • Kosher salt freshly ground pepper to taste

Place spinach in a medium salad bowl. Add beans to bowl. Combine and add olive oil, garlic, salt and pepper. Toss lightly to combine. Chill for a few minutes, so the seasonings can marinate into salad.
