  • 4 boneless chicken breasts, cut into strips
  • 5 T. olive oil
  • ¼ C. lime juice
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 red onion, chopped
  • 2 red bell peppers, cut into strips
  • Flour tortillas

Whisk together 2 tablespoons of oil, lime juice, garlic, salt, and pepper. Toss chicken in mixture, cover, and refrigerate for an hour. In a skillet, heat 2 tablespoons of oil and sauté onion and bell peppers until tender. Remove from skillet, heat remaining oil, and add in marinated chicken. Cook until no longer pink and assemble fajitas with vegetables and your favorite toppings.
