Fresh Blueberry Banana Bread

A nice light bread with blueberries and bananas. May double the ingredients to make more than 1 loaf because 1 loaf will go very fast! This bread can be frozen if you feel like making more than 1 or 2. This tastes great in the cooler months ahead with a cup of tea in the morning. DELICIOUS!

  • 1 C. fresh blueberries
  • 2 Tbs. flour + 1 3/4 C. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 C. butter-flavored Crisco
  • 2/3 C. sugar
  • 2 eggs
  • 1 C. mashed ripe bananas
  • Topping:
  • 1/3 C. brown sugar
  • 1/4 C. flour
  • 2 tsp. cinnamon
  • 1/3 C. ground nuts (walnuts or pecans)
  • 1/4 C. melted butter

Preheat oven to 350 degrees.

Toss the washed blueberries with 2 tablespoons flour. Set aside. Sift the remaining flour, baking powder, baking soda and salt together. Set aside.

In large bowl, cream the Crisco and gradually beat in the sugar until fluffy. Beat in the eggs, one at a time. Add the flour mixture alternately with the mashed banana, stirring until blended. Stir in the blueberries.

Pour mixture into greased loaf pan. Combine topping ingredients, sprinkle on top of batter. Bake for 50-60 minutes or until an inserted toothpick comes out clean.

  • This is absolutely the best banana bread & anything recipe ever! It goes together like a dream and the flavor!! WOW!! Make more than one, that's for certain! Otherwise, it'll come out of the oven and disappear while still cooling; it's that delicious. I've also made it using strawberries and I intend to try with raspberries, as well. I wonder if there's an apricot bread recipe out there??? I highly endorse this bread, you will not be disappointed, I promise!
