  • 1 C. plus 2 T. all-purpose flour
  • 1/4 C. bran cereal
  • 1 C. sugar, divided
  • 1/4 tsp. salt
  • 8 T. unsalted butter, cut into small pieces
  • 3 C. fresh blueberries, rinsed and drained
  • 2 T. cornstarch
  • 2 tsp. lemon zest
  • 2 T. fresh lemon juice
  • pinch of salt

Preheat your oven to 375°F. In a large bowl or blender, mix together flour, cereal, 1/3-cup sugar, salt, and butter. Blend until large crumbs begin to form. Press dough into individual tart pans. Freeze for 10 minutes. Poke the bottom of each with a fork and bake for 10 minutes. In a large saucepan, combine 1/4-cup water with one-cup of berries and bring to a boil. Reduce heat and let simmer until berries begin to break down. Meanwhile, combine cornstarch with two tablespoons of water. Add to the berry mixture and stir. Pour in lemon juice, zest, remaining sugar, and salt. Increase heat and bring mixture to a boil. Reduce heat and simmer for one minute. Remove from heat and add remaining blueberries. Transfer berry mixture into each baked and cooled tart. Serve immediately.
