  • 1 T. olive oil
  • 1 red onion, diced
  • 1 C. quinoa, rinsed and drained
  • 2 C. vegetable broth
  • Salt to taste
  • ¾ C. fresh cranberries
  • Cilantro to taste

In a large skillet, heat oil and sauté onion until translucent. Add in quinoa and toast, stirringly constantly, for 2 to 3 minutes. Pour in broth and season with salt. Bring to a boil, reduce heat, cover, and simmer for 10 to 15 minutes. Add cranberries, cover again, and simmer for 5 to 10 minutes until liquid has completely absorbed. Remove from heat, stir in cilantro, and serve.
