  • 1 packet unflavored gelatin
  • 2 T. cold water
  • 1 C. heavy cream
  • 1/3 C. sugar
  • 1 tsp. cinnamon
  • 1 vanilla bean
  • 2 C. Greek yogurt
  • 1 C. dried apricots
  • 1 C. white wine
  • ΒΌ C. honey

In a bowl, sprinkle gelatin over cold water and set aside for 5 minutes. In a saucepan, combine heavy creamy, sugar, cinnamon, and vanilla bean. Bring to a simmer, remove from heat, stir in gelatin, remove vanilla bean, and whisk in yogurt until smooth. Pour mixture into ramekins and refrigerate for 4 hours to set up. In a saucepan, bring apricots and white wine to a simmer for about 20 minutes. Stir in honey and cook for 5 minutes as sauce thickens. Spoon apricots and sauce over panna cotta.
