A Kentucky classic also featuring green pepper and onion

Ingredients

  • 2 C. fresh corn
  • 2 eggs
  • 2 Tbs. melted butter
  • 2 C. milk, scalded
  • 1 green bell pepper, finely chopped, optional
  • 2 Tbs. finely chopped onion, optional
  • 1 tsp. salt
  • 1/8 tsp. pepper

Directions

Beat eggs; whisk in milk and melted butter. Add corn, green bell pepper, onion, and seasonings. Pour into a greased 1 ½-qt. baking dish. Set dish in a pan of hot water and bake for about 1 hour, until corn pudding is set. A knife should come out clean when inserted in center.
