Fresh Dill Infused Potato Salad
Serving Size / Yield
- 3 lbs. pealed and cooked potatoes
- 1 C. Mayonnaise
- 1 red onion, chopped
- 1/4 C. chopped dill
- 1 T. vinegar
- 1/2 lemon, juiced
- 1 T. whole grain mustard
Cut the cooked and cooled potatoes into cubes and place into a large bowl.
In a small bowl mix together the mayo, red onion, dill, vinegar, lemon juice, and mustard. Pour the mayonnaise mixture over the potatoes and toss so that the potatoes are well coated.
