  • 1/4 C. vegetable oil
  • 3 medium apples, peeled, cored, and chopped
  • 2 red bell peppers, chopped
  • 4 potatoes, peeled, and chopped
  • 1 tsp. sea salt
  • 1/2 T. dill

Preheat oven to 350°F and grease the inside of a casserole dish. In a large skillet over medium heat, add oil. Once oil is hot, add apples. Stir frequently until just softened. Add in bell peppers and potatoes, stirring occasionally. Transfer mixture to your prepared casserole dish, and generously season with sea salt and dill. Bake for about 30 minutes, or until the potatoes are fork-tender.
