  • 2 eggs
  • 2 T. milk
  • Salt and pepper to taste
  • 1 T. butter
  • ¼ C. Parmesan cheese, shredded
  • 2 cloves garlic, minced
  • 2 tsp. parsley
  • 1 T. oregano
  • 1 T. chives, chopped
  • ½ tsp. tarragon
  • ¼ tsp. crushed red pepper flakes
  • Basil to garnish

In a small bowl, combine parsley, oregano, chives, tarragon, and crushed red pepper flakes. In a separate bowl, whisk together eggs, milk, salt, pepper, Parmesan, garlic, and half of your herb blend. In an 8-inch skillet, melt butter over medium heat and pour in egg mixture. Let cook for a minute or two until the bottom of the eggs is firm and top is slightly still liquid. Flip omelet, cook for a few more seconds, remove from heat, and garnish with remaining herb blend and basil.
