Ingredients

  • 1 1/2 C. chopped ripe tomatoes
  • 1/4 C. diced pared cucumber
  • 1/4 C. seeded green bell pepper
  • 1/4 C. trimmed zucchini
  • 1/4 C. chopped scallions
  • 1/2 C. corn kernels, freshly shucked
  • 1 medium carrot, pared and coarsely shredded
  • 1/4 C. finely chopped parsley
  • 1/4 C. finely chopped basil
  • 2 Tbs. diced radishes
  • 6 Tbs. olive oil
  • 1 Tbs. red wine vinegar
  • 1 clove crushed garlic
  • 1/2 tsp. salt
  • 1/4 tsp. coarsely ground black pepper
