Fresh Garden Sauce
Ingredients
- 1-1/2 C. chopped ripe tomatoes
- 1/4 C. diced pared cucumber
- 1/4 C. seeded green bell pepper
- 1/4 C. trimmed zucchini
- 1/4 C. chopped scallions
- 1 ear of corn, husked, kernels cut from cob, uncooked, about 1/2 C.
- 1 medium carrot, pared and coarsely shredded
- 1/4 C. finely chopped parsley
- 1/4 C. finely chopped basil
- 2 Tbs. diced radishes
- 6 Tbs. olive oil
- 1 Tbs. red wine vinegar
- 1 clove crushed garlic
- 1/2 tsp. salt or to taste, coarsely ground black pepper
Directions
Combine all the vegetables, add remaining ingredients and toss to blend. Let stand 20 minutes before using.
