Fresh Ginger Yams
Ingredients
- 4 yams or sweet potatoes
- 3 Tbs. fresh minced ginger
- 4 Tbs. butter or margarine
Directions
Poke holes into the yam, and microwave or bake in the oven until tender. You can also peel, cube and boil. Scoop out the cooked yam from the peeling if it's baked or microwaved and place it in a bowl. Mash, and add the ginger and the butter. Serve warm.
