This is a light salad that can be spruced up with grilled chicken or fish.

  • 6 C. fresh Romaine lettuce torn into bite-sized pieces
  • 1 green pepper thinly sliced
  • 1 seedless cucumbers, peeled and thinly sliced
  • 1 small red onion, thinly sliced
  • Vinaigrette:
  • 1/3 C. olive oil
  • 1/3 C. balsamic vinegar
  • 1 tsp. mustard seed
  • 1 tsp. oregano
  • 1 clove garlic, minced
  • Salt and pepper to taste
